OATMEAL COOKIES 
3/4 c. shortening
1 c. brown sugar
1/2 c. sugar
1 egg
1/4 c. water
1 tbsp. maple extract
1 c. flour
1 tsp. salt
1/2 tsp. baking soda
3 c. quick oatmeal

Cream shortening and sugars well. Add eggs, water and extract. Beat well. Sift flour, salt and soda. Add to mixture; blend well. Stir in oats. Drop by teaspoonfuls onto greased cookie sheet. Bake at 350 degrees for 12-15 minutes.

Can add 1 cup of the following to mixture; pecans, raisins, chocolate chips or coconut.
