THE BEST SQUASH CASSEROLE 
Casserole:

2 c. yellow squash (cooked and mashed)
1 can cream of chicken soup
2 medium carrots (grated)
1/2 c. chopped sweet pepper
1 medium onion (chopped)
1 c. sour cream

Preheat oven to 350°F. Mix all ingredients together. Salt and pepper to taste.

Topping:

1 stick butter
3/4 c. cornmeal stuffing

Prepare stuffing according to package. Top casserole with 3/4 c. of stuffing. Melt butter and pour over stuffing.

Bake at 350°F for 30 minutes.
