1 1/2 lbs. turkey (1200) 1 (40.5 oz.) can red kidney beans (962.5) 1 (28 oz.) concentrated tomatoes puree (Pope brand) (280) 1 (10 oz.) sweet corn (360) 1 c. chopped onions (1 lg.) (60) 1 c. chopped green bell peppers (1 med.) (15) 2 c. celery (10) 1 clove garlic, minced 1 tsp. chili powder 1/2 tsp. Mrs. Dash 1/2 tsp. oregano 1/2 tsp. garlic powder 1/2 tsp. black pepper Total calories 2887.5. Brown turkey, drain off any grease. Put turkey into big pot. With Molly McButter and juice from beans saute onions, bell pepper, and garlic. Pour saute juice into measuring cup and add water to make 7 cups. Then add juice and saute to pot with turkey. Add corn, then add beans and stewed tomatoes. Bring to boil, stirring. Add spices, then simmer 15 minutes or more. (Makes 20 cups at 145 calories per cup.) |
