GREEN CHILIES AND TURKEY SALAD 
2 tbsp. lime juice
1 tbsp. olive oil
1/2 tsp. salt
2 c. cubed turkey breast, cooked
1 (4 oz.) can chopped green chilies, drained
1/2 c. canned corn
1/2 c. cherry tomato halves
2 tbsp. chopped fresh coriander (cilantro)
1 tsp. minced jalapeno pepper
Lettuce and taco chips

In a medium sized bowl mix lime juice, olive oil and salt. Add turkey, chips, corn, tomatoes, coriander, jalapeno and toss well. Serve on lettuce leaves with taco chips.
