CHUNKY CHILI | |
Vegetable cooking spray 1 1/2 c. chopped onion 1 c. chopped green pepper 2 tbsp. chopped jalapeno pepper 3 garlic cloves, minced 1 lb. ground turkey 2 (14 1/2 oz.) cans no-salt whole tomatoes, undrained and chopped 1 (16 oz.) can pinto beans, undrained 1/2 c. frozen whole kernel corn 2 tbsp. chili powder 1/4 tsp. ground red pepper 1/8 tsp. ground cumin 1/4 tsp. salt Coat a medium saucepan with cooking spray. Place over medium heat until hot. Add onion and green pepper. Saute 1 minute. Add jalapeno pepper and garlic; saute an additional 3 minutes or until onion is tender. Add ground turkey; cook about 5 minutes or until turkey is browned. Add chopped tomatoes and remaining ingredients; stir well. Bring to a boil; reduce heat and simmer, uncovered, 20 minutes. Yield: 6 servings (1 1/3 cup); 199 calories, 3.1 gm fat, 49 mg. cholesterol, 367 mg. sodium. |
