WEST TEXAS SPECIAL HAMBURGER
CASSEROLE
 
1 lb. ground round
2 (15 or 16 oz.) cans black-eyed peas with jalapeno
2 c. cooked rice
1 (16 oz.) can tomatoes, drained
1 c. grated sharp Cheddar cheese
1/2 c. minced onion
1 lg. garlic clove, crushed
1 tbsp. butter
Salt and pepper

Brown meat in large skillet, then mix in ingredients in the order given: Black-eyed peas, rice, tomatoes, cheese, onion, garlic, butter and salt and pepper to taste. Bake in 13x9x2 inch baking pan at 350 degrees for 20 minutes. Serves 6 to 8.

Even people that do not usually care for black eyed peas enjoy this dish. I usually use 1 cup raw rice (prepared) which is usually more than 2 cups cooked. I also add in a can of rotel in addition to the tomatoes. You can use any yellow cheese if you don't have sharp cheddar - do make sure you use ground round - fattier hamburger would make the dish too greasy.
