SALMON CIRCLE LOAF 
2 c. or a pound salmon, flaked and deboned
1 1/2 c. cooked tomatoes
1 3/4 c. stale bread crumbs
2 tbsp. melted butter
1 egg, well beaten
1 tbsp. lemon juice
1 tsp. salt
1/4 tsp. pepper

Mix ingredients lightly. Pour into well greased circular mold. Bake in 425 degree oven for 20 minutes. Turn out onto round platter. Fill center with buttered peas and surround with tiny, whole beets. Serves 6 to 8.
