CAPTAIN MATER'S FAVORITE MEAT
LOAF
 
1 lg. slice of white bread
1/4 c. ketchup
1 lb. ground beef
2 eggs
1 onion, chopped fine
Salt and pepper

Put one slice of white bread (can be stale bread) in medium-sized bowl.

Add 1/4 cup of ketchup. Soak the bread in the ketchup until it is soft enough to crumble with a fork. Add the onion and a slightly beaten egg. Mix well.

Add the ground beef and mix well. Add salt and pepper to taste. Shape the mix into a loaf and place in a loaf pan, preferably one that has holes to drain off the fat and is inserted in an outer pan.

Scoop out a small cavity, large enough to hold one uncooked egg, in the top of the meat loaf. Place the egg in the cavity and cover with a thin layer of meat mix.

Bake in a 350 degree oven for approximately 45 to 50 minutes. Serve as a loaf.

Note: To decrease cholesterol, substitute 1/2 pound of ground turkey for a half pound of ground beef. Use egg substitute in place of real eggs.
