CAPTAIN NEMO'S CLAMCAKES 
2 c. minced clams, reserve juice
2 c. all purpose flour
1 tsp. baking powder
2 eggs, beaten
1/2 c. milk
1/4 c. clam juice
1 med. onion, chopped fine
Equal amounts of butter and Crisco for frying

Sift flour and baking powder together. Add the milk, eggs, and clam juice to the above mixture. Mix in the clams, onion and just enough extra milk to make a thick but pourable batter.

Do not crowd skillet. Drop batter by heaping tablespoons and fry in the equal amounts of butter and Crisco. When clamcakes are crisp and brown on one side (3 to 4 minutes), flip them and cook the other side. This recipe makes about 20 clamcakes.
