PEANUT BUTTER DELIGHT 
2 1/2 c. quick oatmeal
1/2 c. peanut butter
2 tsp. vanilla
1 stick butter
2 c. sugar
1/2 c. milk
4 tbsp. cocoa

Measure oatmeal and peanut butter in bowl and set aside. Put butter in pot and melt. Add sugar, milk and cocoa and boil 1 1/2 minutes. Remove from heat and quickly add oatmeal, peanut butter and vanilla. Stir until mixed. Pour into buttered pan. Let cool and cut into squares.

Excellent recipe! I spooned most of the batter into silicone muffin cups, and the rest onto aluminium foil. If you wait for the mixture to cool and soak into the oats a bit they hold their shape on the foil just fine. A tablespoon or so is plenty for each one.

Old fashioned oats make these pleasantly chewy.

I made a total mess just trying to cut one in half; I am very glad I didn't try to cut the whole batch into bars!

Love these! Also works great to place spoonfuls on parchment paper and let cool for thirty minutes and serve as cookies.
