HEARTY VEGAN CHILI 
Cook 1 and 1/2 cups of dried pinto beans in water for 2 hours. Set aside.

1 cup dry rice
1/2 cup corn
1 and 1/2 cups dry beans
2 cups crushed tomato
1 tablespoon Italian Seasoning
2 tablespoons honey
2 tablespoons chili powder
1/2 tablespoon sriracha sauce
1 tablespoon of lemon juice
1/2 tablespoon garlic powder
Salt and pepper as desired

Rinse, soak, and cook the dry pinto beans completely. Do not undercook them! Steam the rice and corn while you wait. If your crushed tomatoes are raw, cook them until they are the consistency of spaghetti sauce. Combine all of the above into a pot. I found 4 quarts to be sufficient. Add the remaining ingredients and let simmer on a very low heat for 15 minutes to let the flavors combine properly.

This is not a Vegan recipe as it contains honey. You could replace honey with a couple of pitted dates or appropriate sugar. Or leave out the sweetener.
