DEVIL'S FOOD CAKE (Low
cholesterol)
 
3/4 c. butter
1 1/2 tsp. vanilla
1 3/4 c. flour
1/4 tsp. salt
1/2 c. boiling water
1 1/2 c. sugar
3 egg whites
1/2 c. cocoa
1/2 c. of 1 1/2% buttermilk
1 tsp. baking soda

Mix soda in buttermilk and set aside.

Cream butter, sugar and vanilla in large mixing bowl. Add egg and beat well.

Combine flour, cocoa and salt. Add alternately with buttermilk and soda to creamed mixture.

Pour batter into 2 (8 inch) cake pans or 2 loaf pans or 13x9x2 inch pan. Bake 350 degrees for 40 minutes or until cake tester comes out clean. If using 8 inch pans, bake 25-30 minutes. Cool 10 minutes. Remove from pans. Frost as desired. Yield: 20 servings.
