STRING BEAN LYONNAISE 
4 sliced bacon, diced
1/4 c. minced onion
1/2 tsp. salt
Speck pepper
1 tsp. vinegar
4 c. cooked or canned string beans

Saute bacon on a skillet until brown. Remove bacon from skillet and rest to bacon fat. Add onion, saute until tender. Add salt, pepper, cooked bacon. Pour over beans.

Mix with fork, and serve.
