MARGARET'S OATMEAL COOKIES 
Super easy and yummy!!

1 cup (2 sticks) unsalted butter, at room temp.
1 cup white sugar
2/3 cup light brown sugar
2 eggs, at room temp.
1/2 tbsp. light corn syrup or golden syrup or honey or glucose (optional)
1 tsp. vanilla extract
2 cups all-purpose flour
1 1/2 cups oats
1 tsp. baking soda
1/4 tsp. salt*

OPTIONAL ADDITIONS:

1 tsp. ground coffee
1 tsp. cinnamon
1 1/2 cups chocolate chips
1/2 cup chopped nuts

Note: If you used salted butter, leave out the 1/4 teaspoon salt.

Preheat oven to 375°F.

In a stand mixer or with an electric mixer, beat butter until creamy. Add both sugars. Beat until creamy. Add the eggs, syrup (optional) and vanilla extract. Beat together. Set aside.

In a separate bowl, mix flour, oats, baking soda, salt, cinnamon (optional) and coffee (optional).

Mix the dry ingredients with the wet ingredients. Add chocolate, nuts, raisins, dried fruit, etc to the mix if you want.

Shape dough pieces into 1 1/2 inch balls. Flatten slightly. Put the cookies on a greased pan or on parchment paper.

Bake at 375°F for 10 to 15 minutes, or until the edges are golden brown.

Makes about 20-30 cookies.
