WHEAT GERM BREAD | |
1 3/4 c. milk 1/4 c. oil 1/2 c. warm water 1/3 c. wheat germ 2 tbsp. sugar 1 tsp. salt 2 pkgs. yeast 5 1/2 - 6 c. flour Scald milk. Place in bowl, add sugar, salt and oil. Cool to lukewarm. Sprinkle yeast on warm water. Stir to dissolve. Add yeast to milk mixture. Add wheat germ and 2 1/2 cups flour. Beat well. Add enough of remaining flour until dough leaves sides of bowl, while beating. Turn onto floured board. Knead 10 minutes. Place in greased bowl, turn until dough is greased on all sides. Cover, let rise one hour. Punch down, cover and let rise one half hour more. Divide dough in half. Form into 2 balls, cover and let rest 10 minutes. Shape into loaves. Place in greased pans, cover. Let rise one hour, brush tops with butter. Bake at 425 degrees for 30 minutes. Makes 2 loaves. |
