BROCCOLI FRITTATA 
2 1/2 tsp. chopped onion
2 tsp. butter
1 (10 oz.) pkg. frozen chopped broccoli, cooked & drained
1/2 clove crushed garlic
1 c. cooked brown rice
2 1/2 tbsp. Parmesan cheese
2 eggs, beaten
1/4 c. milk
Salt & pepper
1/2 c. shredded Mozzarella

Saute onion in butter until tender. Add broccoli, garlic, rice and Parmesan. Mix. Combine eggs, milk, salt and pepper. Stir into rice mixture. Turn into well-greased shallow 1-quart casserole. Top with Mozzarella and bake at 350 degrees for 20 to 25 minutes.
