1 c. zucchini, thinly sliced 1/4 c. sliced pepper (green or red) 1/4 c. sliced mushrooms 2 green onion, with tops, chopped 3 eggs 2 tbsp. water (more, if necessary) Basil, dried thyme to taste Spray small Teflon pan with "Pam." Saute vegetables in water over medium heat, tossing frequently for 2 minutes or until tender. Beat eggs, add dried herbs. Add more water to vegetable mix if original liquid has evaporated, then pour eggs over vegetable mix, cover with lid, cook undisturbed over moderate heat until eggs have set, 5-8 minutes. This is a light diet meal that is fast to prepare. |
