LEMON ZUCCHINI FRITTATA | |
2 sm. zucchini, thinly sliced 2 sm. onions, thinly sliced 1 c. frozen corn or any other veggie you like 1 tbsp. olive oil 8 eggs, lightly beaten 1/2 tsp. thyme, adjust to taste 1/2 tsp. sage, adjust to taste 1/2 c. grated cheese (Cheddar, Jack, Swiss) 1/2 c. cream cheese (you can use light) 1 tbsp. lemon zest Salt and pepper to taste Preheat oven to 400 degrees. Saute onions, zucchini, or other vegetable over medium heat, until softened. Mix in frozen corn and set aside in greased dish. Mix remaining ingredients and pour over vegetables. Bake until puffs and is firm in center 25 to 30 minutes. Serve hot or warm with salsa. This could be a main dish if served with a salad. |
