ZUCCHINI FRITTATA 
1 c. grated zucchini
1 med. onion, chopped
1 clove garlic
Butter & olive oil
1/2 lb. sharp Cheddar cheese
4 beaten eggs
1 tsp. salt
1/4 tsp. pepper
1-2 dashes of Tabasco

Saute onion and garlic in butter or oil until tender. Add grated squash, cook about 5 minutes. Combine squash, cheese, eggs and spices. Put into a greased 9 x 9 inch or 9 x 13 inch pan. Bake 30 minutes at 350 degrees. Good.
