CAMILLA'S FRITTATA | |
Saute one bunch green onions, chopped and a clove of garlic minced, in olive oil. Add 2 cups chopped, sauteed mushrooms (about 1 pound). Add 1 bunch clean, shaken, chopped spinach (or use a 10 ounce package of frozen chopped spinach). Add dill, tarragon and garlic to taste. Crack 1 dozen eggs into blender with salt, pepper and nutmeg. Add 5 to 8 ounces of Jack cheese, grated. Combine all. Bake in two 8 inch quiche pans for half an hour in 350 degree oven. |
