BROCCOLI FRITTATA 
2 1/2 tbsp. minced onion
2 tbsp. butter
1 (10 oz.) pkg. frozen broccoli, cooked & drained
1/2 sm. clove garlic, crushed (opt.)
1 c. cooked rice
2 1/2 tbsp. grated Parmesan cheese
2 eggs, lightly beaten
1/4 c. milk
1/2 tsp. salt
Dash pepper
1/3 c. (or more) shredded Mozzarella cheese

Saute onion in butter until tender, but not brown. Add broccoli, garlic, rice and Parmesan cheese. Mix well. Combine eggs, milk, salt and dash of pepper. Stir into rice mixture. Turn into well greased shallow 1 quart casserole. Top with cheese. Bake in preheated 350 degree oven for 20 to 25 minutes, or until set.
