BANANA OATMEAL MUFFINS 
1 1/2 c. Quaker oats, uncooked
1 1/2 c. all-purpose flour
3/4 tsp. cinnamon
1 tsp. baking powder
3/4 tsp. baking soda
1 c. mashed bananas, in blender
1/2 c. skim milk
1/2 c. firmly packed brown sugar
3 tbsp. Puritan oil
1 egg white (I used 1 egg)
1/2 c. chopped walnuts

Heat oven to 400 degrees. Line 18 muffin cups with paper baking cups. Combine oats, flour, cinnamon, baking powder and baking soda. Add bananas, milk, brown sugar, chopped walnuts, oil and egg. Mix just until dry ingredients are moistened. Fill muffin cups almost full. Bake 20-22 minutes or until deep golden brown. Makes 1 1/2 dozen. Cool. Good warm or cool.
