BANANA OATMEAL MUFFINS 
1 1/4 c. oats
1 c. all-purpose flour
1/2 c. packed brown sugar
2 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. salt
1/4 tsp. baking soda
1 c. mashed ripe bananas (2 med.)
1 egg, slightly beaten
1/2 c. vegetable oil
1/4 c. milk

In large bowl stir together dry ingredients; set aside. In medium bowl mix banana, egg, oil, and milk. Add liquid all at once to dry ingredients, stirring just until moistened. Spoon into greased muffin cups 2/3 full. Bake at 400 degrees for 15-18 minutes.

TOPPING (optional) :

1/2 c. packed brown sugar
2 tbsp. butter
1 tbsp. all-purpose flour
1/8 tsp. nutmeg

In small bowl combine topping ingredients. Sprinkle topping over batter in muffin cups - bake as directed above.
