OATMEAL MUFFINS 
1 c. dry oatmeal
1 c. buttermilk
1 c. flour
1 tsp. salt
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 egg
1/2 c. dark brown sugar
1/4 tsp. melted shortening

Heat oven to 400 degrees. Pour milk over oatmeal. Let stand while sifting flour, salt, baking powder and soda. Beat egg into oatmeal mixture. Beat in brown sugar. Stir in dry ingredients then shortening. Pour in greased muffin tins. Bake about 18 minutes. Serve warm. Yield: 2 dozen bite size muffins.
