JUDGE GEORGE ROSE SMITH'S
PUMPKIN BREAD
 
2 c. cooked pumpkin
2/3 c. milk
1 c. Mazola oil
4 whole eggs
3 c. sugar
1/4 tsp. ground red pepper
3 c. sifted flour
1/4 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
3 tsp. baking soda
1 c. chopped pecans
1 c. or combination of dates, raisins, candied cherries

Combine pumpkin, milk, oil, eggs, and sugar. Mix well, add flour, salt, cinnamon, nutmeg, pepper and soda. Add nuts, dates, raisins, and cherries. Mix thoroughly. Fill greased loaf pans or coffee cans 1/2 full. Bake at 350 degrees until brown all over. Cool on rack before removing from containers.
