SHRIMP SCAMPI 
1 tbsp. snipped fresh parsley or 1 1/2 tsp. dried parsley flakes
1 lg. clove garlic, minced
1/4 c. plus 2 tbsp. butter
1 tbsp. lemon juice
1 lb. raw med. shrimp, shelled and deveined
2 tsp. grated Parmesan

In 2 quart casserole combine parsley, garlic, butter and lemon juice. Microwave at 7 for 2 minutes. Stir in shrimp and Parmesan cheese. Microwave at high for 4 to 5 minutes or until shrimp are opaque. Let stand for 2 to 3 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
