SHRIMP SCAMPI | |
2 lb. unpeeled fresh shrimp, medium size 4 cloves garlic, crushed 1/4 c. chopped onion 4 sprigs fresh parsley, chopped 1 c. butter 1/4 c. olive oil 2 tbsp. lemon juice 3/4 tbsp. salt and dried whole basil 1/2 tsp. dried whole oregano Saute onion, garlic, and parsley until onion is tender in butter and olive oil. Reduce heat; add shrimp and remaining ingredients. Simmer until shrimp are done about 5 minutes. Pour over hot cooked rice if desired. Fresh ground pepper to taste. Good with French or Italian bread. Serves 4-6. |
