APPLE NUT CAKE 
3 c. plain flour
1 tsp. baking soda
1 tsp. salt
1 1/4 c. Mazola or Wesson oil
2 c. sugar
3 well beaten eggs
3 apples, peeled and cut up
1 c. pecans
2 tsp. vanilla

Sift flour, soda and salt together three times. Mix oil with sugar; add eggs; add apples and pecans. Stir flour mixture in with egg mixture. Add vanilla; pour into two 9-inch cake pans. Put into cold oven. Set at 300°F and bake for 45 minutes or until straw comes out clean.

Icing:

1 1/2 c. light or dark brown sugar
1 stick butter
1/4 c. plus 1/8 c. canned cream

Melt butter and sugar over heat until dissolved. Add cream and let it come to a full boil; cool, then beat in powdered sugar until thick enough to spread.
