APPLE NUT CAKE 
3 eggs
1 3/4 c. sugar
1 c. oil
1 tbsp. vanilla
1 tbsp. cinnamon (more if desired)
2 c. self-rising flour or 2 c. flour, 1/2 tsp. salt and 1 tbsp. baking powder
2 c. apples, peeled and diced
1 c. walnuts, diced

Preheat oven to 350°F. Grease a 9 x 13-inch pan. Mix eggs, sugar, oil and vanilla. Add cinnamon; mix well. Add flour; mix well. The mix will be thick. Add apples and walnuts; mix. Pour into pan and bake for 45 minutes. Cool. Sprinkle powdered sugar on top.
