APPLE - NUT COFFEE CAKE 
Shortening (to grease pan)
1 c. all-purpose flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/8 tsp. salt
1/2 c. sugar
1/2 c. shortening
1 egg
1 lg. apple
1/2 c. sour cream
1/4 c. nuts
1/4 c. packed brown sugar
1 tbsp. butter
1/2 tsp. cinnamon
1/2 tsp. vanilla

Grease 9 x 9 x 2 inch pan with shortening. In medium bowl, stir together flour, baking powder, soda, and salt. In large bowl, beat together sugar and 1/2 cup shortening until fluffy. Beat in egg and vanilla until well mixed. Peel apple and chop the apple. Stir half the flour mixture into the sugar mixture. Stir in sour cream. Stir in the rest of the flour mix. Stir in chopped apple. Spread evenly in greased pan. Put chopped nuts into small bowl. Mix in brown sugar, butter, and cinnamon. Sprinkle over coffee cake. Bake at 350 degrees for 30 minutes. Makes 9 to 12 servings.
