SWEET AND SOUR PORK 
1 1/2 lb. lean shoulder pork (cut into bite-size pieces)
2 tbsp. oil
1/4 c. water
2 tbsp. cornstarch
1/2 tsp. salt
1/4 c. brown sugar
1/3 c. vinegar
1 c. pineapple juice
1 1/2 tbsp. soy sauce
1 c. bell pepper (cut in strips)
1/2 c. sliced onion
1 #2 can pineapple tidbits, drained, save juice

Brown pork in oil. Add water and simmer, covered, for 1 hour. In saucepan combine cornstarch, salt, brown sugar, vinegar, pineapple juice and soy sauce; mix. Cook until slightly thick, stirring constantly. Pour sauce over hot pork, simmer for 10 minutes. Add bell pepper, onion and tidbits. Simmer for 5-10 minutes. Serve over rice.
