FRUITED SWEET AND SOUR PORK 
2 tbsp. butter
1 1/2 lb. pork, cut into bite-size pieces
1 (13 oz.) can pineapple tidbits
1/2 c. bottled Russian dressing
3/4 c. water
2 tbsp. cornstarch
1 1/2 tbsp. soy sauce
1 tsp. vinegar
1/4 tsp. salt
1 med. bell pepper, sliced thin
1/2 c. thinly sliced onion

Heat skillet to 350 degrees. Melt butter, add pork and cook 2-3 minutes or until browned. Drain juice from pineapple tidbits reserved 3/4 cup syrup.

Combine syrup with 1/2 cup Russian dressing, 3/4 cup water, cornstarch, soy sauce, vinegar and salt. Pour over meat and stir until thickened. Cover. Turn down to low and simmer 1/2 hour. Add bell pepper, onion and pineapple tidbits. Cover and cook 5 minutes longer. Serve over hot rice.
