STRAWBERRY PIE 
1 pie crust, baked
1/2 c. sugar
1 env. Knox unflavored gelatin
1 (10 oz.) pkg. Bird's Eye quick thaw frozen strawberries
1/2 c. water
Juice of 1/2 lemon
1/8 tsp. almond or vanilla extract
1 c. real whipped cream

Mix sugar, envelope of gelatin and 1/2 cup water together in pan. Cook over low heat until just boiling. Remove from heat and add strawberries, lemon juice and extract. Stir until berries are mixed in and it thickens. Fold in whipped cream. Put mixture in pie shell and refrigerate until it hardens.
