HEARTY WHOLE WHEAT BRAN MUFFINS 
2 c. bran (Miller's unprocessed)
1 1/2 c. whole wheat flour
1/4 c. brown sugar OR honey OR maple syrup
1 tsp. baking soda
1/2 tsp. salt (optional)
1 1/2 c. milk (skim or lowfat)
1 egg plus 1 egg white
1/4 c. safflower oil

OPTIONAL:

1 c. raisins OR
1 banana OR
1 c. blueberries

Mix dry ingredients until well blended. Make a well in the center and add the blended liquid ingredients. Mix long enough to moisten and spoon into muffin pan. Bake at 425 degrees for 15-20 minutes. Makes 1 dozen muffins.

These are really good! I thought they'd be the usual yucky bran. They are actually fairly moist, and after adding a few shakes of cinnamon into the dry ingredients, and about a cup of frozen blueberries into the dry ingredients, they worked out well. I did use two whole eggs instead of one egg and one white. I used about 1/4 cup of batter per cup and got 15 muffins. They cooked for about 12 minutes and they were done (but I have very heavy, nonstick pans). Yum, Thanks!

I was looking for a healthy alternative to cake - a sweet treat my body could use. They came out great! I used almond milk instead of dairy. I also added banana which enhanced the sweetness. I also used All-Bran cereal instead of the unprocessed. Any way you look at it, a guilt-free muffin!

I added nutmeg and cinnamon and apple sauce as well as both blueberries and raisins... why not!! Tasted great.
