HEARTY WHOLE WHEAT BRAN MUFFINS | |
2 c. bran (Miller's unprocessed) 1 1/2 c. whole wheat flour 1/4 c. brown sugar OR honey OR maple syrup 1 tsp. baking soda 1/2 tsp. salt (optional) 1 1/2 c. milk (skim or lowfat) 1 egg plus 1 egg white 1/4 c. safflower oil OPTIONAL: 1 c. raisins OR 1 banana OR 1 c. blueberries Mix dry ingredients until well blended. Make a well in the center and add the blended liquid ingredients. Mix long enough to moisten and spoon into muffin pan. Bake at 425 degrees for 15-20 minutes. Makes 1 dozen muffins. |
