CYNTHIA'S ZUCCHINI FRITTERS | |
2 lb. zucchini 3 eggs 2 cups Panko breadcrumbs 2 cups grated fresh Parmesan cheese 1 garlic clove, minced 1 small onion, minced salt and pepper canola or vegetable oil, for frying Grate zucchini into a bowl. You should then add eggs, Panko, cheese, garlic, onion. Season with salt and pepper and mix well. Heat a large frying pan with oil set to medium/high heat. Drop round tablespoons of zucchini mixture into the pan. Make sure to leave some space for spreading then flatten it slightly. Cook for 2 to 4 minutes each side or until it turns light brown in color. Remove from the pan but keep it warm. Do the remaining mixture with the same procedure.
