ZUCCHINI ROMANO FRITTERS | |
I actually got the fritter recipe from another on here and adapted it. But it is fantastic! 1 cup milk 1 beaten egg 1 1/4 cups shredded zucchini 1 finely chopped garlic clove 1 1/4 cups all-purpose flour 1/3 to 1/2 cup grated Parmesan or Romano cheese (dried) 2 tsp. baking powder 3/4 tsp. salt dash dill dash pepper dash thyme dash Hungarian paprika enough vegetable oil to cover bottom of frying pan In a bowl mix milk, egg, zucchini and garlic. In another bowl mix the dry ingredients... the spices are just what I use but you can use anything you like to taste. Then mix all together slowly. You want a thick pancake like consistency. Have the oil heated and drop a ladle full of your mix into the hot oil. Brown to a dark gold color on each side. I serve this dish with asparagus sitting across 2 fritters and a thick drizzle of holiday sauce across it. Submitted by: Faith |
