ZUCCHINI FRITTER SANDWICH 
My family loves this recipe, they would have it every night if it were up to them.

2 cups shredded zucchini
1 cup shredded carrots (optional)
2 eggs
1 cup white cracker crumbs (I use saltines)
1 heaping tbsp. all-purpose flour
1/2 tsp. seasoned salt
1/4 tsp. garlic (I use prepared garlic in a jar)
1 small onion, chopped
salt and pepper, to taste

Stir all ingredients together, form into patties. Fry in 1/2-inch of oil. Sprinkle with cheese. Serve on a bun with tomato and onion slices.

Serves 4 to 6 depending on how big you make the patties.
