3 c. cubed chicken
3 c. cubed zucchini
1 c. grated carrots
1/2 c. chopped onion
1 sm. pkg. stuffing mix (Blue Cheese, herb, etc. I like Stove Top)
8 oz. sour cream or yogurt
1 can cream of chicken soup or cream of mushroom soup
1 stick melted butter
1 tsp. butter to line casserole

Mix dry stuffing with 1 square of melted butter (line 8 x 8 inch pan with butter, use fingertips 1 teaspoon). Boil chicken cubes and cubed zucchini for 20-30 minutes; drain. Put 1/2 stuffing mixture on bottom of pan. Mix other ingredients together with zucchini and chicken after it is cooked and cooled. Spread this mixture on top of stuffing. Then top with other half of stuffing. Bake 20-30 minutes at 350 degrees. (Or 10 minutes in microwave oven.) Serves 6.
