SWEET POTATO BISCUITS 
4 c. flour
2 tbsp. baking powder
2 tsp. salt
1 scant c. sugar
1 c. butter
2 c. mashed sweet potatoes (canned yams) - reserve 1/4 c. liquid from canned yams as it may be necessary to soften dough
1 tsp. pumpkin pie spice or to taste

To sifted flour, add sugar, baking powder, salt and shortening. Mix with hands until consistency of corn meal. Add sweet potatoes and mix until dough can be easily handled to make biscuits.

Form biscuits by hand (like a hamburger). Bake in 425 degree oven for 12-15 minutes or until lightly browned (if potatoes/yams are dry, add some drops of the reserved liquid). These biscuits won't rise, so make them actual size.
