4 c. Bisquick 3 med. sweet potatoes, boiled, well skinned, and mashed 1/2 c. sugar 1/2 c. milk Mix together sweet potatoes and sugar. Blend with 3 cups Bisquick (reserve remaining cup of Bisquick). Stir in milk. Consistency should be sticky. Leave mixture in bowl and cover with dish towel for 1/2 hour. Pour reserved cup of Bisquick on counter top. Scrape biscuit mixture on top of Bisquick and knead lightly. Pat with ball of hand about 1 inch thick. Cut out biscuits with medium glass, dipping glass each time in remaining Bisquick. Bake at 375 degrees for 20 minutes. Yield: 8 to 10 biscuits. |
