ARMENIAN RICE 
1 tbsp. oil
1/2 c. crushed vermicelli or Texas shaped noodles
1/4 c. butter
2 c. chicken broth
1 c. brown rice, uncooked

Saute vermicelli in oil until golden. Add butter and rice. Saute 5 minutes more. Bring broth to a boil and pour over rice mixture. Reduce heat, cover and simmer 15 to 20 minutes. Add salt to taste. Spread evenly in oblong casserole, then top (see below).

TOPPING:

1/4 c. butter
1/2 c. almonds, sliced
1/2 c. coarsely chopped apricots
1/2 c. raisins
1/2 c. chopped dates
1/2 c. brown sugar

Melt butter, add almonds and saute until golden brown. Add fruit and brown sugar. Cook 2 to 3 minutes. Pour over rice. Garnish with apricots. May use equal amount of mixed dried fruit instead of individuals.
