BROCCOLI-POTATO BAKE | |
2 tbsp. butter 2 tbsp. flour 1 tsp. salt 1/8 tsp. pepper 2 c. milk 1 (3 oz.) pkg. cream cheese, cut up 1/2 c. shredded American cheese 3 c. cubed, cooked potatoes 1 (10 oz.) pkg. frozen chopped broccoli, cooked and drained 1/4 c. fine dry bread crumbs 1 tbsp. butter, melted Melt the 2 tablespoons of butter; blend in flour, salt and pepper. Add milk all at once. Cook and stir until thickened and bubbly. Add cheeses, stirring until melted. Stir in potatoes. Turn half of mixture into 6x10x2 inch baking dish. Top with broccoli. Cover and bake in 350 degree oven for 35 minutes. Mix crumbs and 1 tablespoon melted butter. Sprinkle on top. Bake uncovered 10-15 minutes more. Serves 8. |
