FLUFFY POTATO CASSEROLE 
2 c. cooked mashed potatoes, (6 potatoes)
1 (8 oz.) cream cheese
2 eggs
2 tbsp. flour
1/4 c. onion, chopped fine
1 can French fried onion rings
Salt and pepper

Mix all ingredients except onion rings. Beat until fluffy. Put in greased 9 x 9 pan. Bake uncovered 35 minutes at 300 degrees Put onion rings on the last 5 minutes.
