CUCUMBER SALAD 
1 lg. cucumber
1/2 tsp. salt
1 tbsp. sugar
1 tbsp. cider vinegar
1 tbsp. minced parsley
1/4 c. sour cream (optional)

Peel the cucumber so that a little of the green rind remains. Slice paper thin. Sprinkle slices with salt, sugar and vinegar. Serve this way, topped with minced parsley; or marinate in salt and sugar 15 minutes, drain off liquid that has accumulated, toss with sour cream, then sprinkle with parsley. Makes 4 servings as a relish.
