PICKLED FRESH CUCUMBER 
1 cucumber, about 7 inches long
1/2 c. vinegar
2 tbsp. sugar
1/4 tsp. salt
Dash of white pepper
1 tbsp. fresh parsley, chopped

Wipe cucumber and slice without peeling. Press out as much water as possible after slicing the cucumber. Place in glass dish. Mix vinegar, sugar, salt and pepper thoroughly; pour over cucumber and sprinkle with the parsley. Allow to stand 2 to 3 hours in refrigerator before serving.
