BEEF WITH BROCCOLI 
1 lb. lean beef
1/2 lb. fresh broccoli
2 tbsp. onion, chopped
4 tbsp. vegetable oil
2 tbsp. water
1/2 tsp. sugar
1/4 tsp. salt

MARINADE:

2 tbsp. soy sauce
1 tbsp. cooking sherry
1 tsp. sesame oil
1/2 tsp. salt
1/2 tsp. sugar
1/4 tsp. ginger powder or 1 tsp. finely chopped ginger root
1 tbsp. cornstarch

Slice beef against the grain into very thin 1 1/2-inch pieces. Mix beef well with marinade ingredients and set aside. Cut broccoli into small florets. Peel tough outer membrane from stems and slice on the diagonal into bite-size pieces. Chop onion.

Heat vegetable oil in wok or large fry pan over high heat. Brown onion for a few seconds. Add beef. Cook and stir until beef is almost cooked through, about 2 minutes.

Transfer beef to a bowl, leaving liquid, if any, in pan. Add water and broccoli to pan. Cook and stir about 30seconds. Add sugar and salt. Cook and stir until the broccoli is tender but still crunchy, about 2 minutes. Return beef to pan. Mix with broccoli and cook and stir about 30 seconds longer.
