BAKED POTATOES POTATO SALAD | |
4 or 5 potatoes 1/2 cup sliced green onions 1 cup cubed cheddar cheese 6 strips cooked bacon, crumbled 1/2 (8 oz.) pkg. cream cheese 1 cup dairy sour cream dash of each salt and pepper Clean and wrap potatoes in tin foil. Bake in 375°F oven for 45 to 55 minutes. Cool slightly to handle. Cut up baked potatoes, let cool for 2 hours or overnight (cheese will melt if potatoes are too hot). Add green onions, cheddar cheese and crumbled bacon. Mix together cream cheese, dairy sour cream and season with salt & pepper to taste. Mix cream cheese mixture with potatoes. Note: If you are going to a potluck or picnic, double the recipe. Submitted by: ybest |
