CAFE BRULOT 
1 c. cognac brandy
4 tbsp. sugar
10 cloves
1/3 orange peel, cut into thin strips
2 cinnamon sticks, broken in half
3 (3 inch) strips of lemon peel
1 qt. cafe noir

Combine all ingredients except coffee, in a brulot bowl. Place bowl over warm water until brandy warms. (Do not let brandy get too hot or it will burn). Put a lump of sugar into a tablespoon, add a little cognac and light. When this lights use it to ignite the bowl. Flame slowly while adding brewed coffee.

Serves 8.
