SPINACH CHEESE PIE 
1 (3 oz.) pkg. cream cheese, softened
6 eggs
1/2 c. shredded sharp Cheddar cheese
1 pkg. (10 oz.) frozen chopped spinach
2 tbsp. minced onion
1 tbsp. parsley
1/2 tsp. salt
Pepper to taste
Pie crust, 9"
2 tbsp. grated Parmesan cheese

Beat cream cheese, eggs and Cheddar cheese. Stir in the cooked and well drained spinach, onion, parsley, salt and pepper.

Pour spinach filling into pie crust. Sprinkle with cheese and bake at 425 degrees for 30 minutes or until inserted knife comes out clean. Cool 10 minutes and serve.
