RED VELVET CAKE 
2 1/2 c. flour
1 c. buttermilk
2 c. hot oil
1 tsp. salt
2 tsp. cocoa
1 tsp. vinegar
1 oz. red food coloring
2 eggs
1 tsp. baking soda
1 tsp. vanilla
1 1/2 c. sugar

Cream sugar and oil, add eggs, beat well. Sift together flour, salt and soda. Mix cocoa and red coloring together. Add vinegar and mix. Heat well at 350 degrees until done.

FILLING:

1 stick butter
1 pkg. (8 oz.) cream cheese
1 lb. box confectioners' sugar
1 c. pecans
1 tsp. vanilla
